Indian Recipe: Vegetable Stew

Ingrediants:
  1. Potatoes - 2 nos
  2. Carrots - 1 nos
  3. Green peas - ¼ cup
  4. Onion (thinly sliced)- 1 no
  5. Cloves - 5 nos
  6. Cardamom - 4
  7. Cinnamon stick - 2 nos
  8. Black pepper- 10 nos
  9. Green chillies - 4 nos
  10. Coconut milk - 2 cup
  11. Curry leaves - As reqd
  12. Butter - As reqd
  13. Cashew nuts - a few
  14. Raisins - a few
  15. Salt - As required

Preparation:
  1. Boil potatoes and carrots, remove skin and cut into small pieces.
  2. Cook Green peace in boiled water and drain well.
  3. Heat butter in a pan and fry onion, green chillies and all the masalas.
  4. When onion starts to change it color to brown add the coconut milk.
  5. When it begins to boil add the vegetables and salt and cook for 5 minutes.
  6. In another pan heat butter and fry cashew nuts, raisins and curry leafs.
  7. Add this to the stew and serve hot with appam or bread.
