Indian Recipe: Vegetable Stew
Ingrediants:- Potatoes - 2 nos
- Carrots - 1 nos
- Green peas - ¼ cup
- Onion (thinly sliced)- 1 no
- Cloves - 5 nos
- Cardamom - 4
- Cinnamon stick - 2 nos
- Black pepper- 10 nos
- Green chillies - 4 nos
- Coconut milk - 2 cup
- Curry leaves - As reqd
- Butter - As reqd
- Cashew nuts - a few
- Raisins - a few
- Salt - As required
Preparation:
- Boil potatoes and carrots, remove skin and cut into small pieces.
- Cook Green peace in boiled water and drain well.
- Heat butter in a pan and fry onion, green chillies and all the masalas.
- When onion starts to change it color to brown add the coconut milk.
- When it begins to boil add the vegetables and salt and cook for 5 minutes.
- In another pan heat butter and fry cashew nuts, raisins and curry leafs.
- Add this to the stew and serve hot with appam or bread.
