Indian Recipe: Sambar
Ingrediants:- Dal (Parippu) - 1/4 cup
- Onion (big) -1 nos
- Ladies finger (Vendakka) -8 nos
- Eggplant small (Vazhuthananga) - 1 nos
- Drumstick (Muringakka)- 2 nos
- Water – 2 cups
- Tomato - 1 no
- Chilly powder - 1/2 tbsp
- Coriander powder - 1tbsp
- Turmeric powder – 1/4 tsp
- Cumin Seeds (Jeerakam) powdered - 1 tsp
- Fenugreek seeds (Uluva) powdred – 1 tsp
- Asafoetida (Kayam) - 1/4 tbsp
- Salt - As reqd
- Tamarind (Puli) - A lemon size
- Mustard seeds - 1 tsp
- Coriander leaves - A few
- Curry leaves - A few
- Oil - 1 tbsp
Preparation:
- Cook dal and water and smash it with a spoon
- Cook all the vegetables along with smashed dal.
- Put tamarind in a little water and extract the juice.
- Add this and salt in the boiling vegetables.
- In a pan dry roast chilly powder, coriander powder, turmeric powder and kayam in low flame with out burning.
- Add this to the curry and stir well.
- Also add cumin powder and fenugreek powder and boil further for 5 minutes.
- Splutter mustard seeds in oil and add curry leaves and coriander leaves.
- Add this to the Sambar.
