Indian Recipe: Olan
Ingrediants:- Black-eyed beans (Van payaru) - 1/2 cup
- White gourd cut into 1 inch cubs (Kumbalanga) - 2 cups
- Green chillies(slit) - 4 nos
- Thick coconut milk (1st extract) – 1/2 cup
- Thin coconut milk (2nd extract) - 1cups
- Curry leaves - A few
- Coconut oil - 1 tsp
- Mustard seeds - 1 tsp
- Salt - As required
Preparation:
- Cook vanpayar with salt and keep aside.
- Cook kumbalanga, green chillies and salt along with second extract of coconut milk.
- Add the cooked vanpyar and boil for a while.
- Add the first extract of coconut milk and boil for 3-5 minutes and remove from fire.
- Heat oil in a pan.
- Add mustard seeds and when they splutter, add curry leaves.
- Add the above seasoning into the boiling curry.
