Indian Recipe: Olan

Ingrediants:
  1. Black-eyed beans (Van payaru) - 1/2 cup
  2. White gourd cut into 1 inch cubs (Kumbalanga) - 2 cups
  3. Green chillies(slit) - 4 nos
  4. Thick coconut milk (1st extract) – 1/2 cup
  5. Thin coconut milk (2nd extract) - 1cups
  6. Curry leaves - A few
  7. Coconut oil - 1 tsp
  8. Mustard seeds - 1 tsp
  9. Salt - As required

Preparation:
  1. Cook vanpayar  with salt and keep aside.
  2. Cook kumbalanga, green chillies and salt along with second extract of coconut milk.
  3. Add the cooked vanpyar and boil for a while.
  4. Add the first extract of coconut milk and boil for 3-5 minutes and remove from fire.
  5. Heat oil in a pan.
  6. Add mustard seeds and when they splutter, add curry leaves.
  7. Add the above seasoning into the boiling curry.
