SouthIndian Recipe: Bhindi Tomato Fry

Ingrediants:
  1. Ladies finger/okra (cut into small peices) – 12 no
  2. Onion (thinly sliced)– 1 no
  3. Tomato (cut into small pieces)– 1 small
  4. Coconut squares– a few
  5. Chilly powder – 1 tsp
  6. Turmeric powder – ¼ tsp
  7. Curry leaves – a few
  8. Oil – 4 to 5 tbsp
  9. Salt - as required

Preparation:
  1. In pan heat oil and fry onions, curry leaves and salt.
  2. When onions are light brown in color add tomatoes, chilly powder and turmeric powder.
  3. Fry till tomatoes are soft and well fried.
  4. Add the okra and coconut squares and mix well.
  5. Lower the flame and put the lid on. Stir occasionally
  6. When okras are ¾ done remove the lid.
  7. Fry till all the water is evaporated and curry is really dry.
