SouthIndian Recipe: Bhindi Tomato Fry
Ingrediants:- Ladies finger/okra (cut into small peices) – 12 no
- Onion (thinly sliced)– 1 no
- Tomato (cut into small pieces)– 1 small
- Coconut squares– a few
- Chilly powder – 1 tsp
- Turmeric powder – ¼ tsp
- Curry leaves – a few
- Oil – 4 to 5 tbsp
- Salt - as required
Preparation:
- In pan heat oil and fry onions, curry leaves and salt.
- When onions are light brown in color add tomatoes, chilly powder and turmeric powder.
- Fry till tomatoes are soft and well fried.
- Add the okra and coconut squares and mix well.
- Lower the flame and put the lid on. Stir occasionally
- When okras are ¾ done remove the lid.
- Fry till all the water is evaporated and curry is really dry.
