Indian Recipe: Mutton Biryani

Ingrediants:
  1. Mutton - 1kg
  2. Button onion (thinly sliced)- 1 cup
  3. Button onion (grind to paste) - 1/4 cup
  4. Green chillies - 6
  5. Garlic cloves - 10 nos
  6. Ginger (thinly sliced)- 1 big piece
  7. Chilli powder - 1tbsp
  8. Coriander powder -2 tbsp
  9. Turmeric powder - 1 tsp
  10. Garam masala -21 tsp
  11. Coconut oil - 3 tbsp
  12. Coriander Leaves- a few

Preparation:
  1. Cook mutton, green chillies, salt and a little water in a pressure cooker.
  2. Heat oil in a pan.
  3. Add the sliced onion,onion paste, garlic, ginger and sauté well.
  4. Make a paste of chilli, coriander, turmeric and garam masala powders by adding a little water.
  5. Add this to the pan and fry for 5 more minutes.
  6. Then add mutton and cook till gravy thickens.
  7. Garnish with coriander leaves.
Serving:
  1. Prepare rice as described in Biryani Rice
  2. In a tray first place a layer of rice, then place a layer of mutton.
  3. Repeat this till all the mutton and rice is placed.
  4. Serve the Biryani with pappadam, lime pickle and raitha.
