SouthIndian Recipe: Mixed Vegetable
Thoran
Ingrediants:
- Cabbage (thinly sliced)– ¼ of one
- Carrot (cut into small pieces)– 1 no
- Beans (thinly sliced)– a bunch
- Onion (finely chopped) – 1 no
- Grated coconut – 1 cup
- Green chillies – 5 nos
- Cumin seeds – a pinch
- Turmeric powder – ¼ tsp
- Mustard seeds – ½ tsp
- Oil – 3 tbsp
- Curry leaves – a few
- Salt- enough
Preparation:
- Heat oil in a pan and splutter mustard seeds.
- Add chopped onions, green chillies, turmeric power, curry leaves and salt.
- Fry till onion begins to change its color to slight brown.
- Add grated coconut and all the vegetables and sauté well.
- Lower the heat and put the lid on.
- Cook till the vegetable is tender.
