SouthIndian Recipe: Mixed Vegetable
Thoran

Ingrediants:
  1. Cabbage (thinly sliced)– ¼ of one
  2. Carrot (cut into small pieces)– 1 no
  3. Beans (thinly sliced)– a bunch
  4. Onion (finely chopped) – 1 no
  5. Grated coconut – 1 cup
  6. Green chillies – 5 nos
  7. Cumin seeds – a pinch
  8. Turmeric powder – ¼ tsp
  9. Mustard seeds – ½ tsp
  10. Oil – 3 tbsp
  11. Curry leaves – a few
  12. Salt- enough

Preparation:
  1. Heat oil in a pan and splutter mustard seeds.
  2. Add chopped onions, green chillies, turmeric power, curry leaves and salt.
  3. Fry till onion begins to change its color to slight brown.
  4. Add grated coconut and all the vegetables and sauté well.
  5. Lower the heat and put the lid on.
  6. Cook till the vegetable is tender.
