Indian Recipe: Mango Curry
Ingrediants:- Raw mango - 1 no
- Onion (cut into long piece) - 1no
- Turmeric powder - ¼ tsp
- Chilly powder - 1 tsp
- Green chillies - 4 nos
- Salt - As reqd
- Coconut milk - 2 cup
- Mustard seeds - 1 tsp
- Fenugreek(Uluva) fried and powdered - tsp
- Curry leaves - A few
- Oil - 1 tsp
Preparation:
- Peel and cut mango into small pieces
- Mix mango,onion, turmeric, green chillies ,chilly powder, coconut milk and salt in a pan.
- Cook them in high flame till it begins to boil.
- Then lower the flame and cook till mangos are tender
- When the curry begins to thickens remove from flame.
- Heat oil in a pan and splutter mustard seeds.
- Add curry leaves and saute.
- Add the above seasoning into the curry.
- Add the fenugreek powder.
- This curry tastes better after it sits for one day.
