Indian Recipe: Jalebi

Ingrediants:
    For Jalebi:
  1. Urad dal (socked in water) – 2cup
  2. Water – to make thin batter
  3. Yoghurt – 1 tbsp
  4. Red food color – a pinch
  5. Oil – for frying
  6. For Syrup:
  7. Sugar – 2 cup
  8. Water – 2 ½ cup
  9. Cardamom powder – ¼ tsp
  10. Red food color – a pinch

Preparation:
    For Jalebi:
  1. Blend urad dal, food color and water to make a smooth thin batter which has a consistency of Idely.
  2. Add yoghurt and leave it standing overnight.
  3. Heat sufficient oil to float jalebis , in a frying pan.
  4. Spoon mixture into a bag with a 1cm wide hole.
  5. Pipe the batter in double circles into oil.
  6. Cook in moderate heat until both sides are golden brown.
  7. Place into the warm sugar syrup for a few minutes.
  8. Drain on absorbent paper.
  9. For Syrup:
  10. Combine all the ingredients in a saucepan and bring to boil.
  11. Simmer over a low heat for 5 to 10 minutes until thick syrup is formed.
  12. Keep warm.
