SouthIndian Recipe: Garlic Cabbage-
Thoran

Ingrediants:
  1. Cabbage (thinly sliced) – ½ of a small one
  2. Button onions – 3 no
  3. Garlic pods – 4 no
  4. Grated coconut – 2 handfuls
  5. Chilly powder – ¼ tbsp
  6. Turmeric powder – ¼ tsp
  7. Oil – 3 tbsp
  8. Mustard seeds – ½ tsp
  9. Curry leaves – a few
  10. Salt – as required

Preparation:
  1. Coarsely grind button onions, garlic, chilly powder and grated coconut.
  2. Heat oil in a pan and splutter mustard seeds.
  3. Add curry leaves and ground mix and sauté for a few seconds.
  4. Add the cabbage and salt and sauté well.
  5. Lower the heat and put the lid on.
  6. Cook till the cabbage is really tender.
  7. Remove the lid and in a high flame fry till all excess water is evaporated.
