Indian Recipe: Fish Biryani

Ingrediants:
  1. Fish - 1kg
  2. Button onion (crushed) - 1/2 cup
  3. Tomatoes (finely chopped) -2
  4. Ginger(thinly sliced)- one small piece
  5. Garlic (crushed) - four flakes
  6. Green chillies -3
  7. Chilli powder - 1 tbsp
  8. Coriander powder - 1 tsp
  9. Turmeric powder - ¼ tsp
  10. Garam masala powder - 1tsp
  11. Vinegar - 3 to 4 tbsp
  12. Oil - 1/4 cup
  13. Salt - to taste
  14. Curry leaves - a few
  15. Water - 1 cup

Preparation:
  1. Clean the fish and make gashes on both sides.
  2. Make a paste with pinch of turmeric powder, ¼ tbsp of chilly powder and salt.
  3. Apply well on the fish.
  4. Now slightly fry on a pan by adding a little oil and keep aside for a while.
  5. Heat coconut oil well, and add the onion and  curry  leaves
  6. When the onions turn brown, add the remaining masala powders and sauté well
  7. Add tomatoes, ginger, garlic and green chillies and sauté well.
  8. When the oil appears at the sides, add vinegar, water and fish.
  9. When the fish is cooked and the gravy thickens, remove from fire.
Serving:
  1. Prepare rice as described in Biryani Rice
  2. In a tray first place a layer of rice, then place a layer of fish.
  3. Repeat this till all the fish and rice is placed.
  4. Serve the Biryani with pappadam, lime pickle and raitha.
