SouthIndian Recipe: Tomato Fish Curry

Ingrediants:
  1. Fish fillets (cut into small pieces) - ½ kg
  2. Tomato (sliced) - 2
  3. Vinegar - 5 tbsp
  4. Onion (sliced) – 1
  5. Chilli powder - 1 tsp
  6. Turmeric powder - ½ tsp
  7. Green chillies (half slit) - 6
  8. Ginger (sliced) - 2-inch piece
  9. Thin coconut milk - 1 ½ cup
  10. Thick coconut milk - ½ cup
  11. Salt - to taste
  12. Coconut oil – 1 tbsp
  13. Button onions (sliced) -2
  14. Curry leaves - a few

Preparation:
  1. In pan and add sliced onion, ginger, green chillies, red chilly powder and turmeric powder.
  2. Add the thin coconut milk and salt and cook.
  3. When it begins to boil add the vinegar and fish.
  4. Cover the pan with a lid and cook in low flame for 20 minutes.
  5. Add the thick coconut milk and tomatos and cook for 5 more minutes.
  6. Remove from flame.
  7. In another pan heat some coconut oil and fry the button onion and curry leafs.
  8. Add this to the curry and serve hot with rice.
