Indian Recipe: Fish Mango Curry
Ingrediants:- Fish fillets (cut into small pieces) - 1 kg
- Raw mango (sliced) - 1
- Onion (sliced) – 1
- Chilli powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Green chillies (half slit) - 6
- Ginger (sliced) - 2-inch piece
- Thin coconut milk - 11/2 cup
- Thick coconut milk - 1/2 cup
- Salt - to taste
- Coconut oil – 1 tbsp
- Button onions (sliced) -2
- Curry leaves - a few
Preparation:
- In pan and add sliced onion, ginger, green chillies, red chilly powder and turmeric powder.
- Add the thin coconut milk and salt and cook.
- When it begins to boil add the mango pieces and fish.
- Cover the pan with a lid and cook in low flame till the mangoes are tender.
- Add the thick coconut milk and cook for 5 more minutes.
- Remove from flame.
- In another pan heat some coconut oil and fry the button onion and curry leafs.
- Add this to the curry and serve hot with rice.
