Indian Recipe: Fish Mango Curry

Ingrediants:
  1. Fish fillets (cut into small pieces) - 1 kg
  2. Raw mango (sliced) - 1
  3. Onion (sliced) – 1
  4. Chilli powder - 1 tsp
  5. Turmeric powder - 1/2 tsp
  6. Green chillies (half slit) - 6
  7. Ginger (sliced) - 2-inch piece
  8. Thin coconut milk - 11/2 cup
  9. Thick coconut milk - 1/2 cup
  10. Salt - to taste
  11. Coconut oil – 1 tbsp
  12. Button onions (sliced) -2
  13. Curry leaves - a few

Preparation:
  1. In pan and add sliced onion, ginger, green chillies, red chilly powder and turmeric powder.
  2. Add the thin coconut milk and salt and cook.
  3. When it begins to boil add the mango pieces and fish.
  4. Cover the pan with a lid and cook in low flame till the mangoes are tender.
  5. Add the thick coconut milk and cook for 5 more minutes.
  6. Remove from flame.
  7. In another pan heat some coconut oil and fry the button onion and curry leafs.
  8. Add this to the curry and serve hot with rice.
