Indian Recipe: Egg Roast

Ingrediants:
  1. Egg – 4 nos
  2. Onion (thinly sliced) – 4 nos
  3. Tomatoes (diced) – 2 nos
  4. Green chillies – 4 nos
  5. Chilly powder – ¼ tbsp
  6. Turmeric powder – ¼ tbsp
  7. Coriander powder – ½ tbsp
  8. Garam masala – ½ tbsp
  9. Water –1 cup
  10. Oil – 6 tbsp
  11. Salt – as required
  12. Curry leaves – a few
  13. Coriander leaves – a few

Preparation:
  1. Hard boil the eggs and remove the shell.
  2. Heat oil in a pan and fry onion, green chillies and curry leaves by adding salt.
  3. When onions begin to change its color to brown add tomatoes.
  4. Fry till tomatoes are cooked.
  5. Make a paste of chilly, turmeric, coriander and garam masala powders by adding a little water.
  6. Add this to the curry and fry in low flame till a nice aroma comes.
  7. Add the water and cook.
  8. When the gravy begins to thick add the eggs.
  9. Remove from flame and garnish with coriander leaves.
