Indian Recipe: Dates Pickle

Ingrediants:
  1. Dates – ¼ kg
  2. Garlic pods – 20 nos
  3. Green chilly (cut into small pieces)– 4 nos
  4. Ginger (thinly sliced) – 2 inch piece
  5. Chilly powder – 1 tbsp
  6. Turmeric powder – ¼ tsp
  7. Mustard Seeds – ½ tbsp
  8. Fenugreek– ¼ tbsp
  9. Asafetida – ¼ tsp
  10. Oil – ½ cup
  11. Vinegar – ½ cup
  12. Salt – as required

Preparation:
  1. Remove the seeds of the dates and cut them into 2 pieces
  2. Dry roast mustard seeds, fenugreek and asafetida and powder them
  3. Heat oil in a pan.
  4. Fry garlic till they are only half fried and keep aside
  5. Then fry green chillies and ginger.
  6. Add all the powders and sauté till a nice aroma comes.
  7. Remove from flame and add dates, salt and garlic.
  8. Pour vinegar and mix well.
  9. When cool keep them in a tight jar.
  10. Use them after 2 to 3 weeks.
