Indian Recipe: Dates Pickle
Ingrediants:- Dates – ¼ kg
- Garlic pods – 20 nos
- Green chilly (cut into small pieces)– 4 nos
- Ginger (thinly sliced) – 2 inch piece
- Chilly powder – 1 tbsp
- Turmeric powder – ¼ tsp
- Mustard Seeds – ½ tbsp
- Fenugreek– ¼ tbsp
- Asafetida – ¼ tsp
- Oil – ½ cup
- Vinegar – ½ cup
- Salt – as required
Preparation:
- Remove the seeds of the dates and cut them into 2 pieces
- Dry roast mustard seeds, fenugreek and asafetida and powder them
- Heat oil in a pan.
- Fry garlic till they are only half fried and keep aside
- Then fry green chillies and ginger.
- Add all the powders and sauté till a nice aroma comes.
- Remove from flame and add dates, salt and garlic.
- Pour vinegar and mix well.
- When cool keep them in a tight jar.
- Use them after 2 to 3 weeks.
