Indian Recipe: Carrot Halwa

Ingrediants:
  1. Carrot (grated) – ½ kg
  2. Milk – 3 1/2 cup
  3. Maida or all purpose flour – 2 tbsp
  4. Cashew nut (roasted in ghee)– a few
  5. Ghee – 50 gm
  6. Sugar – 125 gm
  7. Cardamom (peeled and powdered) – 4

Preparation:
  1. Mix carrot, milk, maida and sugar
  2. Cook in a thick bottomed pan on medium flame.
  3. Stir continuously and add ghee little by little.
  4. Cook till a round mass is formed in the pan.
  5. Add the cardamom powder.
  6. Grease a plate and set the mixture in it.
  7. When cool, cut into squares
  8. Garnish with Cashew nuts.
