Indian Recipe: carrot Fry

Ingrediants:
  1. Carrot (cut into long pieces) - 3 big
  2. Onion (thinly sliced) – 1
  3. Chilly powder – ¼ tbsp
  4. Mustard seeds – a few
  5. Curry leaves – a few
  6. Oil – 4 tbsp
  7. Salt – as required

Preparation:
  1. In a frying pan heat oil and splutter mustard seeds.
  2. Add onion, chilly powder and curry leaves and fry till onion is slightly brown.
  3. Then add carrots and salt and sauté well.
  4. Lower the flame and put the lid on and cook till carrots are ¾ cooked.
  5. Remove the lid and in a medium heat well fry the carrots till they are soft.
  6. Goes well with rice and fish curry as a side dish.
