Indian Recipe: Bittergourd Carrot Pickle
Ingrediants:- Bitter gourd
(Pavakka) - 2 nos
- Carrot - 2
- Chilly powder -
1 tbsp
- Asafetida
(Kayam) - 1/4 tbsp
- Garlic cloves -
7-8 nos
- Ginger (sliced)
- 2" piece
- Green chillies
(slit)- 7 -8
- Mustard seeds -
1 tsp
- Vinegar - 1 cups
- Oil - 5 tbsp
- Salt - As required
Preparation:
- Cut bitter gourd and carrot into small pieces.
- Marinate bitter gourd with vinegar for 5 to 6 hours.
- Then remove from vinegar and squeeze well.
- Heat oil in a pan.
- Fry green chilly, ginger and garlic.
- Add chilly powder and asafetida.
- Add the bitter gourd and salt and sauté till it is half cooked.
- Then add carrot and sauté till bitter gourd is cooked
- Splutter mustard seeds in another pan and add this to the pickle.
