Indian Recipe: Bittergourd Carrot Pickle

Ingrediants:
  1. Bitter gourd (Pavakka) - 2 nos
  2. Carrot - 2
  3. Chilly powder - 1 tbsp
  4. Asafetida (Kayam) - 1/4 tbsp
  5. Garlic cloves - 7-8 nos
  6. Ginger (sliced) - 2" piece
  7. Green chillies (slit)- 7 -8
  8. Mustard seeds - 1 tsp
  9. Vinegar - 1 cups
  10. Oil - 5 tbsp
  11. Salt - As required

Preparation:
  1. Cut bitter gourd and carrot into small pieces.
  2. Marinate bitter gourd with vinegar for 5 to 6 hours.
  3. Then remove from vinegar and squeeze well.
  4. Heat oil in a pan.
  5. Fry green chilly, ginger and garlic.
  6. Add chilly powder and asafetida.
  7. Add the bitter gourd and salt and sauté till it is half cooked.
  8. Then add carrot and sauté till bitter gourd is cooked
  9. Splutter mustard seeds in another pan and add this to the pickle.
