Indian Recipe: Biryani Rice
Ingrediants:
- Basmati rice -
2 cups
- Water - 3cups
- Onion (thinly sliced)- 1 no
- Lemon juice - 1tbsp
- Cloves
- 8 nos
- Cinnamon
sticks - 2 inch long piece
- Cardamom
– 8 nos
- Carrot (thinly sliced into long pieces)
-1 no
- Beans (thinly
sliced) - 15 nos
- Cashew nut - a
few
- Raisins - a few
- Curry leafs
– a few
- Ghee
– as required
- Coriander leaves (chopped) - a few
- Salt - as
required
Preparation:
- Heat ghee in a pan and fry onion with a pinch of salt till it is golden
brown and crisp.
- Fry carrot and beans by adding salt and ghee.
- Fry curry leaves, cashew nuts and raisins in ghee.
- Bring rice and water to boil, stirring occasionally.
- Add lime juice, salt, cloves, cinnamon, cardamom and 2 tbsp of
ghee.
- Lower heat, cover and simmer for 12 to 15 mins.
- Remove from heat and stand covered for 5 to 10 mins.
- Mix the rice with fried seasonings. Sprinkle coriander leaves on top.
- Serve
hot with lime pickle,
pappadams and raitha
