Indian Recipe: Biryani Rice

Ingrediants:
  1. Basmati rice - 2 cups
  2. Water - 3cups
  3. Onion (thinly sliced)- 1 no
  4. Lemon juice - 1tbsp
  5. Cloves - 8 nos
  6. Cinnamon sticks - 2 inch long piece
  7. Cardamom – 8 nos
  8. Carrot (thinly sliced into long pieces) -1 no
  9. Beans (thinly sliced) - 15 nos
  10. Cashew nut - a few
  11. Raisins - a few
  12. Curry leafs – a few
  13. Ghee – as required
  14. Coriander leaves (chopped) - a few
  15. Salt - as required
Preparation:
  1. Heat ghee in a pan and fry onion with a pinch of salt till it is golden brown and crisp.
  2. Fry carrot and beans by adding salt and ghee.
  3. Fry curry leaves, cashew nuts and raisins in ghee.
  4. Bring rice and water to boil, stirring occasionally.
  5. Add lime juice, salt, cloves, cinnamon, cardamom and 2 tbsp of ghee.
  6. Lower heat, cover and simmer for 12 to 15 mins.
  7. Remove from heat and stand covered for 5 to 10 mins.
  8. Mix the rice with fried seasonings. Sprinkle coriander leaves on top.
  9. Serve hot with lime pickle, pappadams and raitha
