SouthIndian Recipe: Avial
Ingrediants:- Long runner beans (Achinga/Payar) – 8 nos
- Drumsticks (Muringakkai) – 2 nos
- Elephant yam (Chena) – a small peice
- Carrots – 1 nos
- Raw banana (Paccha Ethakkai) – 1 nos
- Eggplant (Vazhuthananga)– 1 nos
- Ladies finger (Vendakkai) –4 nos
- Tomato – 1 nos
- Grated coconut – ½ of one
- Yogurt/Curd - 2 tbsp
- Green chillies – 5 nos
- Turmeric powder - ¼ tsp
- Cumin seeds(Jeerakam) - 1 tsp
- Salt - As reqd
- Coconut oil - 3 tbsp
- Curry leaves - 1 sprig
Preparation:
- Cut all the vegetables into a 2 inch long pieces.
- Start cooking with whichever vegetable takes more time to cook (yam, raw banana etc.) adding just enough water to cook along with turmeric powder and salt.
- Add all other vegetables one by one.
- Coarsely grind together coconut, cumin seeds and green chilly
- When vegetables became tender, add grinded coconut and yoghurt.
- Cook on a low flame, till all the water is absorbed.
- Remove from flame and pour coconut oil on top.
- Garnish with curry leaves.
- Serve hot with rice or chapatti
