Indian Recipe: Aloo Gobi

Ingrediants:
  1. Cauliflower (cut into small pieces) –½ of a small one
  2. Potato (cut into small pieces) - 2 small
  3. Onions (finely chopped) – 1 no
  4. Tomato (diced) - 1 no
  5. Chilly powder – 1 tsp
  6. Coriander powder –2 tsp
  7. Turmeric powder –¼ tsp
  8. Cumin seeds (Jeerakam) –¼ tsp
  9. Garam masala – ½ tsp
  10. Coriander leaves – 2 tbsp
  11. Oil – 3 tbsp
  12. Salt –as required

Preparation:
  1. Heat oil in a pan and splutter cumin seeds.
  2. Make a paste of all the spices by adding a little water.
  3. Fry onion till light brown in color.
  4. Add tomato and spice mix and fry till oil starts to separate from the mixture.
  5. Add potatoes, salt and 1 cup of water and mix well.
  6. Cover the pan with a lid and lower the heat.
  7. When potatoes are half cooked add the cauliflower.
  8. Cook in low flame till vegetables are done .
  9. When the curry begins to thicken remove from fire.
  10. Sprinkle chopped coriander leaves on top.
