Indian Recipe: Sambar

Ingrediants:
  1. Dal (Parippu) - 1/4 cup
  2. Onion (big) -1 nos
  3. Ladies finger (Vendakka) -8 nos
  4. Eggplant small (Vazhuthananga) - 1 nos
  5. Drumstick (Muringakka)- 2 nos
  6. Water – 2 cups
  7. Tomato - 1 no
  8. Chilly powder - 1/2 tbsp
  9. Coriander powder - 1tbsp
  10. Turmeric powder – 1/4 tsp
  11. Cumin Seeds (Jeerakam) powdered - 1 tsp
  12. Fenugreek seeds (Uluva) powdred – 1 tsp
  13. Asafoetida (Kayam) - 1/4 tbsp
  14. Salt - As reqd
  15. Tamarind (Puli) - A lemon size
  16. Mustard seeds - 1 tsp
  17. Coriander leaves - A few
  18. Curry leaves - A few
  19. Oil - 1 tbsp
on size
Preparation:
  1. Cook dal and water and smash it with a spoon
  2. Cook all the vegetables along with smashed dal.
  3. Put tamarind in a little water and extract the juice.
  4. Add this and salt in the boiling vegetables.
  5. In a pan dry roast chilly powder, coriander powder, turmeric powder and kayam in low flame with out burning.
  6. Add this to the curry and stir well.
  7. Also add cumin powder and fenugreek powder and boil further for 5 minutes.
  8. Splutter mustard seeds in oil and add curry leaves and coriander leaves.
  9. Add this to the Sambar.
