Indian Recipe: Laddu

Ingrediants:
  1. Gram flour (Besan flour) – 2 cup
  2. Baking powder – 1 tsp
  3. Sugar – 1 cup
  4. Ghee or refined oil – for frying
  5. Cardamom – 1 tsp
  6. Yellow color – a pinch
  7. Sugar candy – ½ gm
  8. Raisins – a few
  9. Cashew nuts – a few

Preparation:
  1. Blend gram flour, baking powder, yellow color and enough water to make a smooth batter like Dosa.
  2. Heat oil in a pan.
  3. Hold a frying spoon with holes over the oil
  4. Place a little batter at a time into the frying spoon.
  5. Strike the frying spoon so that mixture falls through the spoon into the oil.
  6. Fry the in medium flame to a golden color.
  7. Blend and boil sugar and 1 cup of water to make syrup of one third consistency.
  8. Add cardamom and keep the syrup warm.
  9. Drain the boondi thoroughly and put it into the syrup.
  10. Fry cashew nuts and raisins in ghee and add to the boodi.
  11. Crush sugar candy and add this also.
  12. Mix all together well.
  13. While hot, form balls with oily hands.
  14. Set aside to let it turn hard.
  15. Store in air tight tin.
