Indian Recipe: Fish Pollichathu
(Fish Roasted in a Plantain Leaf)
Ingrediants:
- Fish (Pomphret or Karimeen)- 1 kg For marinate
- Cinnamon
powder - 1 tsp - Turmeric powder - 1/2 tsp For the masala paste and gravy
- Salt - to taste
- Coriander powder - 2 tsp
- Chilli powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Pepper powder - ¼
- Vinegar - 3 to 4 tbsp
- Coconut oil - 3 tbsp
- Button onions (sliced)-1 cup
- Garlic (crushed)-5cloves
- Ginger (sliced) – I inch piece
- Green chillies, slit – 4
- Curry leaves - a few
- Coconut milk - 1cup
Preparation:
- Clean the fish and make gashes on both sides.
- Marinate the fish with cinnamon powder, turmeric powder and salt for 1hr.
- In a flat frying pan place a plantain leaf (should have the size of the pan) and pour oil to fry the fish.
- Pour a little water behind the leaf in order to protect it from burning.
- Place the fish in the leaf and cover with another leaf.
- Cover the pan with the lid.
- When one side is fried, fry the other side the same way.
- Make a paste of coriander, chilli, turmeric and pepper powders with a little water.
- In a pan, heat oil and sauté button onions, ginger, garlic, chillies and curry leaves.
- Add the masala paste and sauté until the aroma seems right.
- Add vinegar and coconut milk.
- Add the fish and simmer on low heat until fish is coated with gravy.
