Indian Recipe: Erissery
Ingrediants:- Elephant yam(Chena) – ¼ kg
- Raw banana (Paccha Ethakkai) - A big one
- Chilly powder – ½ tbsp
- Turmeric powder - 1/4 tsp
- Water - 1 cup
- Salt - As reqd
- Coconut(grated) - 1/2 of one
- Cumin seeds(Jeerakam) - A pinch
- Mustard seeds -1/4 tsp
- Coconut oil - 1 tbs
- Curry leafs - a few
Preparation:
- Cut elephant yam and raw banana into 1-inch cubs.
- Add water and cook them till they become tender
- Grind one-fourth amount of coconut, chilly powder, turmeric powder and cumin seeds.
- Add this to the vegetables and cook to boil.
- Remove from flame.
- In a pan fry remaining portion of coconut till it became golden brown
- Add this to the vegetable.
- In pan heat oil and splutter mustard seeds and also add the curry leafs.
- Add the curry to this and serve hot.
