Indian Recipe: Carrot Pickle
Ingrediants:- Carrot ( cut into 2 inch pieces) – 3 cup
- Ginger (thinly sliced) – 2 tbsp
- Garlic – 12 pods
- Chilly powder – 2 tbsp
- Mustard seed powder – ½tbsp
- Fenugreek powder – ½ tbsp
- Asafetida – ¼ tbsp
- Refined oil – 1 cup
- Vinegar – 1 cup
- Salt – as required
Preparation:
- Marinate carrot with salt.
- Heat oil in a pan and fry ginger, garlic and chilly powder with out burning.
- Add the vinegar to this and bring to boil.
- Add mustard seed powder, fenugreek powder and asafetida.
- Remove this from fire.
- Add the carrot pieces and mix well.
- Use this pickle after one week.
