Indian Recipe: Carrot Pickle

Ingrediants:
  1. Carrot ( cut into 2 inch pieces) – 3 cup
  2. Ginger (thinly sliced) – 2 tbsp
  3. Garlic – 12 pods
  4. Chilly powder – 2 tbsp
  5. Mustard seed powder – ½tbsp
  6. Fenugreek powder – ½ tbsp
  7. Asafetida – ¼ tbsp
  8. Refined oil – 1 cup
  9. Vinegar – 1 cup
  10. Salt – as required

Preparation:
  1. Marinate carrot with salt.
  2. Heat oil in a pan and fry ginger, garlic and chilly powder with out burning.
  3. Add the vinegar to this and bring to boil.
  4. Add mustard seed powder, fenugreek powder and asafetida.
  5. Remove this from fire.
  6. Add the carrot pieces and mix well.
  7. Use this pickle after one week.
