Indian Recipe: Beetroot Fry

Ingrediants:
  1. Beetroot (cut into long pieces) –2 nos
  2. Onion (thinly sliced) – 1 nos
  3. Mustard seeds – ½ tsp
  4. Green chillies – 4 nos
  5. Oil – 4 tbsp
  6. Salt – as required
  7. Curry leafs –a few

Preparation:
  1. Heat oil in a pan and splutter mustard seeds.
  2. Fry onions, curry leafs, green chillies and salt till onion changes its color to light brown.
  3. Add beetroot and saute well.
  4. Lower heat and cover the pan with a lid. Cook till beetroot is tender.
  5. Then fry in a medium heat till all the water is evapurated and beetroot is well fried.
  6. Remove from flame and serve hot with rice as a side dish.
